Traditionally, Balanzoni, also known as “tortelli matti”, were made with what was left of the Tortellini filling and the ricotta used to make Tortelloni. The filling is a mix of real Bolognese heritage, which Gratifico makes with soft fresh ricotta, 30-month aged Parmigiano Reggiano DOP and delicious artisanally crafted Mortadella. The result is a rich and tasty product, a timeless classic in Bolognese cuisine.
